It is almost Easter! Are you excited or do you not care about it that much? I grew up in a typical German family with traditions on these kind of holidays; not so much because of the religious meaning behind it but rather because it means spending time with the family. So it is only natural that I want to serve some sweets on this special weekend. I have a very easy and quick recipe that I want to share with you. This is a recipe for simple butter cookies that you can easily serve as Easter cookies if you decorate them a little bit.
-2 cups (250g) all-purpose flour
-0,5 cups (100g) granulated sugar
-3,5oz (100g) butter (room temperature)
-1 tsp baking powder
-1 tsp vanilla extract
Whisk together all the dry ingredients in a bowl. Add butter, egg and vanilla extract and knead (using your hands) or beat (using a hand mixer) until combined. Preheat oven to 356°F (180°C). Place parchment paper on a baking sheet. Form cookies (form a ball and press flat) and place them on the parchment paper. Sprinkle some sugar on top of them. You can either leave them like that or decorate them as I did. I used a cookie stamp on some of the cookies and pressed some lightly with a fork. Bake for 20minutes until golden. Let them cool down on a cooling rack. You can frost some of the cookies if you want (mix 1/3 cup (45g) powdered sugar+ 1.5 tbsp water) and decorate them with sprinkles. Enjoy!
